Egg Roll in a Bowl
Egg roll in a bowl is one of my favorite keto one pot dinners. It's easy, quick, and tastes great! I hope you enjoy my rendition of this family staple!
You Need:
- 1 pound ground pork
- 1 bag slaw mix (or 1/2 chopped green cabbage)
- 1/2 diced onion
- 1/4 cup soy sauce or coconut aminos
- 1-2 cloves garlic minced
- 1 teaspoon fresh ginger chopped (or 1/2 teaspoon dried)
- 2 tablespoons chicken broth
- salt and pepper to taste
- green onions
- 1 tablespoon sesame oil
- sesame seeds
Directions:
Brown the 1 pound of ground pork in a large pan or wok. While it's browning, chop the 1/2 onion into slivers and mince the 1-2 cloves garlic and piece ginger. When the pork is browned, but not cooked through, add the onion and sauté 5-6 minutes until onion is cooked. Add 2 tablespoons broth and 1/4 cup soy sauce, ginger and garlic. Stir for 1 minute, add cabbage or bag of slaw, mix, and cover for 5-8 minutes until cabbage is as limp as desired and pork is cooked all the way through. Remove from heat and drizzle with sesame oil and green onions and sprinkle with sesame seeds. Eat!
