Keto Bagel

Most keto bread recipes use cream cheese or mozzarella--so what's a dairy free girl to do? Make bagels with almond butter, of course!

These delicious bagels are keto and dairy free to boot. Hope you like them! Feel free to use them for burger buns, lunch sandwiches or even dollop a little guacamole on top for breakfast. They are amazing and very bread-like. Enjoy--oh, and this makes 6 bagels!

You Need:
  • 3 tablespoons flax seed (measure before grinding)
  • 1/2 cup almond butter 
  • 2 tablespoons psylium husk (measure before grinding)
  • 1/2 cup cashew milk 
  • 1 heaping tsp baking powder
  • pinch of salt
  • 1 egg
  • 1 tsp beef gelatin
Directions: Preheat oven to 365f/185c. Grind your flax seed 1-3 seconds and your psylium husk about 2 seconds--they should be lightly ground, not chunky but not fine. Throw everything into a bowl and mix for 2-3 minutes until well incorporated. Batter should be the consistency of slightly runny peanut butter. Scoop into donut/bagel pan, filling each slightly below the top. Bake 25-30 minutes.
