Cashew Chicken
I love Asian inspired dishes! Cashew chicken has 6 gram net carbs per serving, and the below recipe makes 4 servings. Enjoy!
You Need:
- 4-5 chicken thighs
- oil (I use olive)
- 1/4 cup raw cashews
- 1/2 green pepper
- 1/2 onion minced
- 1 tsp ginger (not ground)
- 1 tsp rice wine vinegar (I left this out in the video by accident)
- 1/4 cup soy sauce
- 1 tbsp sesame oil
- 1 tbsp chili garlic sauce
- 2 cloves minced garlic
- sesame seeds and green onions for garnish
Directions:
With the pan on low heat, toast your cashews for 7-8 minutes. They should be nice and crispy when done--remove them to a separate bowl.
Brown the chicken for 3-4 minutes before adding the 1/2 dices onion, garlic, ginger and 1/2 diced green bell pepper. Cook another 3-4 minutes.
Now add the sauce to the pan (1 tsp rice vinegar, 1/4 cup soy sauce, 1 tbsp garlic chili sauce and 1 tbsp sesame oil). Simmer until liquid is reduced and chicken is cooked through.
Serve by itself or on a bed of cauliflower rice. Garnish with green onion and sesame seeds. Enjoy!
Makes four servings at 6g net carbs a serving.
