Instant Pot Lemon Chicken
  • 1-2 pounds chicken thighs 
  • 1 teaspoon salt
  • 1 onion, diced
  • 1 tbsp oil
  • 5 gloves garlic, minced
  • 1/2 cup chicken broth
  • 2 tsp dill (dried)
  • 1 lemon, juced
  • mushrooms
Directions: Using your instant pot saute feature, cook the onions and mushrooms in 1 tbsp oil until translucent. Add in all the other stuff (unless using fresh dill) and hit the poultry setting for 15 minutes. I cook up the cauliflower rice while the pot does its thing to the chicken, and serve. If you are using fresh dill you add it at the end and stir.
