No-Bake Cookies
My oven is currently broken. It's been hard, because all I want right now are egg casseroles and roasted cauliflower. And muffins. So I made these no-bake cookies as a treat to take the edge off my sugar cravings. And to help with my angst over a broken oven. They have 1 net carb per cookie and are more of a glorified fat bomb. Enjoy! Makes 16-18 cookies (I use a tbsp scoop to portion them).
You need:
- 3/4 cup coconut flakes
- 1/4 cup hemp hearts
- 2 tbsp coconut butter
- 1/3 cup nut butter (almond or peanut)
- 1/4 cup cacao powder
- 1/4 cup + 2 tbsp nut milk (I used cashew)
- 1/2 teaspoon vanilla extract
- 10 drops stevia
Directions:
In a small saucepan combine all ingredients and stir for 3-5 minutes until liquid is reduced. Place 1 tbsp drops on a wax covered sheet pan, pushing them down to make "cookies" if desired. Place in freezer for 10 minutes, store in fridge for 3-5 days.
