Pumpkin Muffins


Muffins are a fun treat to bake for an event or even just for a snack. These can even be made for breakfast! This recipe makes 10 muffins at 2.5 net carbs each.

You Need:
  • 1/3 cup coconut flour
  • 4 eggs
  • 1/3 cup pumkin
  • 1.5 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking powder  
  • 1/4 cup toasted pecans 
  • 1/4 cup cashew milk
  • 1/4 cup zero carb maple syrup
  • 1 tbsp swerve
Directions: Mix the above together in a big bowl making sure there are no clumps. Place into 10 muffin tins filling about 3/4th the way up. Bake at 350f for 25-30 minutes. Enjoy with a drizzle of syrup on top or just pop in your mouth for a quick snack. There are approximately 2.5 net carbs a muffin!
