On days that I don't have leftovers for lunch, I usually opt for a tuna salad. It's quick and requires no heating up and my toddler likes it. A win/win for this busy mom!
You Will Need:
- 2 cans of tuna, drained
- 1/4 cup mayo of your choice (I go over 3 low carb mayos in the video)
- 1-2 tablespoon spicy mustard
- salt and pepper to taste
- 1/8 of a minced red onion
- banana peppers
