Tuna Salad


On days that I don't have leftovers for lunch, I usually opt for a tuna salad. It's quick and requires no heating up and my toddler likes it. A win/win for this busy mom!

You Will Need:
  • 2 cans of tuna, drained
  • 1/4 cup mayo of your choice (I go over 3 low carb mayos in the video)
  • 1-2 tablespoon spicy mustard
  • salt and pepper to taste
  • 1/8 of a minced red onion
  • banana peppers
Combine all of the above and mix well. I like to plate mine in lettuce wraps or even in a bell pepper. On lazy days I simply spoon it into my mouth. This has about 1g carbs per serving when made in a lettuce wrap. Enjoy!
