Pea Protein Mug Cake


I love cake. And sometimes I want quick cake. That is what this protein bomb is. At 2g net carbs it is totally keto--but it does have 22g protein in it. Just watch your macros. This is my take on a vanilla mug cake, vegetarian keto style. Dairy free.

2g net carbs per mug cake. If you half it it's basically sinless. Hah.

I topped mine with coconut yogurt and raspberries, making it 3 net carbs.


You Need:
  • 1 tsp olive oil
  • 2-4 drops liquid monk fruit
  • 10 drops stevia (I used vanilla flavored)
  • 1 tbsp nut milk (I used coconut)
  • 1/2 scoop pea protein powder (I used NOW Foods brand)
  • 1 tsp vanilla extract 
  • 1 egg
  • 1/2 tsp baking powder 
Directions:

In a small bowl (or mug--but it works better in a bowl) place all liquid ingredients and stir. Next top it off with all the dry, and stir some more! Mixture should resemble pancake batter. Microwave for 60 seconds. Top with sugar free chocolate, raspberries, yogurt, or desired indulgence. Enjoy!
