Chocolate Chip Cookies

Every diet needs chocolate chip cookies. These are my dairy free keto ones! This recipe makes makes 15 cookies at 1.4 net carbs each using almond butter. Using peanut butter will bump the carbs up a bit.

You need:
  • 3/4 cup sugar free nut butter (if liquid, use less nut milk)
  • 2 tbsp coconut flour
  • 2 tbsp coconut oil
  • 1/4 cup lily's chocolate chips
  • 1 egg
  • 1 tbsp beef gelatin
  • 1/2 cup nut milk
  • 10 drops stevia
  • 1 teaspoon vanilla extract
  • 10 drops monk fruit extract 
  • 1 teaspoon baking powder

Preheat oven to 350 degrees f. Place all of the above in a bowl and mix until dough like. If your nut butter is liquid (full of oil) use less nut milk. The dough should not stick to your hands. Place 1 tablespoon of batter on a baking sheet (parchment paper or nonstick spray is recommended) to make a "cookie". Cook for 11 minutes. Makes 15 cookies at 1.4 net carbs each.
