Keto Avocado Toast


I love avocado toast. Actually, I love toast! This quick recipe for keto avocado toast includes my keto 90 second bread recipe as well as an easy avocado spread. Enjoy! Recipe makes three small avocado "toasts" (one serving) at 2.5 net carbs. This carb count does not include the tomato on the toast.

Mug Cake Ingredients:
  • 1 egg
  • 1 tbsp coconut flour
  • 1 tbsp coconut oil
  • 1.5 tbsp coconut milk
  • 1 tsp baking powder
  • 1 tsp ground psyllium husk
  • dash Italian seasoning (or other "bread like" seasoning)
  • dash salt
Avocado Spread:
  • 1 avocado
  • 1/2 lime, juced
  • 2 stalks green onion, minced
  • dash garlic powder
  • salt and pepper
Directions: In a mug or bowl place all the bread ingredients. Microwave 90 seconds and let cool 1-2 minutes. Cut into three or more slices depending on the thickness you want and toast in a non stick skillet with 1 tsp coconut oil or butter flavored coconut oil (or other oil).

Mix together the avocado ingredients in a small bowl and generously dollop onto toasted bread. Top with anything you like: nuts, seeds, salt, red onion, tomatoes, nutritional yeast... Eat right away!
