Zucchini Pizza Crust
I love pizza. I've tried a few different pizza crusts as a keto follower and honestly have been wildly disappointed. Soggy, saggy, tasteless cake-like things are not crusts. I don't like coconut flour as a pizza crust. And nothing with the word "almond" in it belongs on a pizza. Ever. I also can't do dairy, so the amazing "fathead" crust will always be out of my reach (or gastrointestinal desires).
But zucchini (also called a courgette in some places) can be a pizza crust. This I can do. I am finally happy with the state of my pizza.
This pizza does have one downside. It clocks in at 10 net carbs a serving! That's the whole pizza through--10 carbs. I can do 10 carbs for an entire pizza once a month. What I am saying is--this is not an every day thing. But it's so worth it when I have the pizza craving. One whole pizza is 10 net carbs, so if you eat less, you will consume less carbs. Obviously.
You can top it with whatever you want. I did a simple basil dressing to keep the carbs low, and some onions and bell peppers. Enjoy!
You Need:
- 2 zucchini shredded (about 2 cups)
- 2 eggs
- 1/4 cup ground hazelnuts
- 1/2 tsp ground golden flaxseed
- 2 tsp hemp hearts
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1 tbsp coconut flour
