Chicken Jambalaya


You Need:
  • 1 tbsp coconut oil
  • 1 diced onion 
  • 1 pack chicken sausage (already cooked)
  • 4 tbsp Cajun seasoning, divided 
  • 1/4 cup chicken stock
  • 2-3 stalks celery, diced
  • 2 green peppers, diced (other colors work fine)
  • 1 clove garlic, minced
  • 1 can diced tomatoes
  • 1 bag frozen cauliflower rice 
  • 1/2 cup frozen kale
  • dried parsley
  • salt and pepper to taste
Directions:

This is really simple. All I do is cook the onion, celery and green peppers in the oil and 1tbsp seasoning until the onion is translucent. I add the garlic, chicken stock, tomatoes and kale after the onion is cooked and simmer until my kale is no longer frozen and it's bubbling quite nicely. After that I add in all the rest of the ingredients except the parsley and cook for 10 minutes unitl everything is mixed and cooked how I like it. Plate up and sprinkle with the parsley.
