Pudding
You Need:
- 1 can coconut milk, unsweetened (a can of coconut cream works too, and tastes richer)
- ¼ cup cacao powder (coco powder works too)
- 10 drops monk fruit sweetener
- 1 tbsp coconut oil
- 10 drops vanilla stevia
- 1 tsp vanilla extract (1.5-2 tsp if using regular stevia and not vanilla)
- pinch salt
- ½ cup hot water
- ¼ cup chia seeds
Directions: Combine all the above in a blender. Blend until no lumps, place in the fridge for at least 6 hours. Good for 3 days.
