Pudding


You Need:
  • 1 can coconut milk, unsweetened (a can of coconut cream works too, and tastes richer) 
  • ¼ cup cacao powder (coco powder works too) 
  • 10 drops monk fruit sweetener 
  • 1 tbsp coconut oil 
  • 10 drops vanilla stevia 
  • 1 tsp vanilla extract (1.5-2 tsp if using regular stevia and not vanilla) 
  • pinch salt
  • ½ cup hot water 
  • ¼ cup chia seeds 
Other things I have added: 1 tbsp strong brewed espresso or coffee and/or peanut butter, cacao butter

Directions: Combine all the above in a blender. Blend until no lumps, place in the fridge for at least 6 hours. Good for 3 days.
