Pumpkin Bread


You Need:
  • 2 eggs
  • 3 tbsp coconut oil
  • 1/2 lemon, juiced (and a pinch of zest)
  • 1/2 cup almond flour
  • 2 tbsp coconut flour
  • 1 tsp vanilla extract 
  • 1/2 cup pumpkin puree 
  • 1/4 cup sugar free "maple" syrup
  • 1/2 cup unsweetened sunflower seed butter
  • 2 tsp baking powder
  • 1/4 tsp ginger
  • 1 tsp pumpkin pie spice
  • 1 tbsp cinnamon
  • dash salt
Directions: Combine all of the above until there is no lumps, and everything is mixed. Spray a bread loaf pan with nonstick spray and bake at 350f for 45-55m. Mine took 50.
