Sesame Ginger Chicken


You Will Need:
  • 1-2 inches minced ginger
  • 1/2 onion chopped
  • 2 garlic cloves minced
  • 2 zucchini, chopped
  • a small head of cabbage chopped
  • 1 pound chicken
  • coconut aminos or soy sauce (1/4 cup)
  • coconut oil
  • green onions
  • sesame oil
Directions:
I cook everything on a "low" heat in cast iron, about a "2" on my oven. Any heat setting under "medium" (that would be around a "5" on my stove) will work. 

Cook the onions in 1 tablespoon of coconut oil until translucent. Add the garlic, zucchini and ginger and stir for 1-2 minutes.   Add in the chicken and coconut aminos and cook until almost done. You can do this really in any steps you like, I think I added the chicken second in the video.

When everything is almost cooked I add the chopped cabbage on top and place a lid on it for 5-8 minutes until the chicken is cooked through and the cabblage is steamed to my liking.

Top with sesame oil and green onions. Eat.
